PAUSE Her Eats: Roasted Strawberries With Lemon Ripple

Serves 2, ready in 15 minutes (378 Kcal per serving).

Ingredients

  • 225g strawberries
  • 25g butter
  • Orange – 2 tsp grated zest, 2 tbsp juice
  • 2 tsp caster sugar
  • 4 tsp lemon curd
  • 6 tbsp creme fraiche

Method

Preheat the over to 220C. Spread the strawberries in one layer in a small ovenproof dish. Dot with the butter and sprinkle with the orange zest and juice and the sugar.

Roast for 10-12 minutes until soft, but still keeping their shape.

Spoon the strawberries and juices into two dishes. Gently swirl the lemon curd into the creme fraiche and then spoon into the dishes. Serve immediately.

Alternative – Instead of strawberries, roast whole bananas and serve with salted caramel sauce.
